Spicy chicken bites
Crispy Thai-style bites with chili crunch heat and red curry aroma. The perfect snack for an apéro, the sofa or “oops, that went faster than planned”.

Ingredients
- 300 g minced chicken
- 1 egg
- Finely chopped green beans
- Finely chopped onion (optional, but recommended)
- 1 tbsp oil
- Fish sauce
- Coconut sugar
- 1–2 tbsp red curry paste
- 1 tbsp chili crunch
Method
Mix the minced chicken well with the curry paste, chili crunch, egg, beans and onion.
With wet hands, form small bite-sized pieces. Not too big – these are snacks, not meatballs.
Heat the oil in a pan.
Fry the bites on medium heat until golden brown all over and nicely crisp.
Finish with a little fish sauce and a pinch of coconut sugar.
Serve hot – ideally with extra chili crunch on top.
Tips
- Minced pork or tofu work surprisingly well instead of chicken.
- Perfect as an apéro, finger food or the “I'm just having a quick bite” lie.
