Ingredients

  • 300 g minced chicken
  • 1 egg
  • Finely chopped green beans
  • Finely chopped onion (optional, but recommended)
  • 1 tbsp oil
  • Fish sauce
  • Coconut sugar
  • 1–2 tbsp red curry paste
  • 1 tbsp chili crunch

Method

  1. Mix the minced chicken well with the curry paste, chili crunch, egg, beans and onion.

  2. With wet hands, form small bite-sized pieces. Not too big – these are snacks, not meatballs.

  3. Heat the oil in a pan.

  4. Fry the bites on medium heat until golden brown all over and nicely crisp.

  5. Finish with a little fish sauce and a pinch of coconut sugar.

  6. Serve hot – ideally with extra chili crunch on top.

Tips

  • Minced pork or tofu work surprisingly well instead of chicken.
  • Perfect as an apéro, finger food or the “I'm just having a quick bite” lie.
